In case you have not already seen it, there is a photo pool on flickr called recipes to share, in which flickrers add photos of food they just made with the recipes. toyohara posted a photo series about making Baum Kuchen. Although I’ve eaten Baum Kuchen before, only in Japan, it was always pre-packaged. I had no idea the cake is slowly cooked, layer by layer, on bamboo as it grills over hot coals. Does anyone make Baum Kuchen in this style in L.A.? Ever witnessed one being grilled?

    baumkuchen is actually a german cake made on a special machine. for a while there was a guy in Chicago who made them here, but no more. i’m first generation american and i grew up eating not baumkuchen, but something called baumkuchenspitzen — basically the pieces that drip off the spit as it turns that are then coated in chocolate.

    i found the prepackaged japanese baumkuchen stuff for the first time at nijiya market last week and bought it — it’s actually nothing like the real thing, which is a far richer dough (not a sponge cake) heavy with butter, eggs and almond paste.

    the cake is coated in chocolate and because it is so rich, sliced into very thin rings.

    Hi Miriam, Baumkuchenspitzen sounds incredible! Thanks for the information. It looks like Japanese baumkuchen is made with a a much less sweet hot cake mix. I’m a chocolate and almond paste fan so I’ll have to hunt in L.A. for baumkuchenspitzen although I imagine my chances of finding it freshly made are dim.

    Great photo series, toyohara (hiroki). Are you a king of Japanese Party Cuisine?? Your ‘Complete Guide to Flowing Somen’ is an interesting read as well. Did you let your dog eat all your paella?

    every year around the holidays, Trader Joe’s brings in baumkuchenspitzen. they are not even remotely as good as the real thing, but they’ll give you an idea.

    i actually have a recipe from an obscure german holiday cookbook — it’s incredibly complicated, involving painting batter on in thin layers and broiling each one for a miniscule amount of time.

    one of these days. . .

    How exciting, even if they’re not homemade! I’ll be casing the TJ Holiday Fearless Flyer in November. I love the little Belgian chocolates TJ’s gets around that time of year too.
