		<description>I think of good pupusas much in the same way as good tacos. That is, not too much adornment please. Keep it flavorful and simple. This is, after all, civilian food.

I used to absolutely *love* El Salvadoreno in Duarte, that is until I found several chunks of glass in my meal one day a year or so ago. Sadly, that put an end to my trips to El Salvadoreno (especially sad since the proprietors are wonderful people). And, while I miss the pupusa revuelta con frijol, what I *really really* miss is the curtido, left in questionable hygienic plastic containers on the table tops. Absolutely fantastic is a very, ummm, rustic way.

Looks like I'll have to try Atlacatl when I'm next out that way.</description>
