Lemon Zest SmoothieMy husband and I just invented a new drink. Borne mostly from leftovers it goes something like this:

The day before, take four lemons and carefully peel the zest off of them with a peeler. Place in a shallow bowl and cover with vodka. For the exercise we used Skyy. Leave vodka lemon mixture in fridge overnight. Next day, drain vodka into glass receptacle (we used a baby food jar). About 6 fluid ounces.

You’re ready to make your smoothy.

Get out the blender and place the following frozen fruit into it (in whatever proportions you like):

Frozen Pineapple
Frozen Strawberries
One Fresh Banana
A splash (about 8 oz) of Orange Juice
4 oz of the lemon vodka

Blend to the consistency you prefer your smoothies. Makes two 8 oz+ servings.

Drink … maybe garnish with a sprig of mint or curl of lemon zest.

You’re asking yourself why didn’t we just use Lemon Vodka of some sort? Well, it’s not nearly as lemony as this stuff. It’s not very alcoholy, the vodka just adds a smidge of a kick plus the essence.

We also made Lemon Martinis of our own recipe last night, too. That goes something like this:

Juice a bunch of zested lemons. Cut up some of the vodka soaked lemon zest from above into thin strips/curls.

Fill a martini shaker with ice.

Add the following:

2 parts Vodka
2 parts Limoncello
1 part freshly squeezed lemon juice

Nope, no sugar in there.

Just shake vigorously and then pour into a martini glass and garnish with a bit of lemon zest.

    Are you using homegrown meyer lemons? Love Limoncello!

    Sadly they’re not homegrown, just from a bag at Trader Joe’s.

    I do, however, have a lime tree. Lime recipes will come in late August when they’ve ripened.

    This is almost like a health food–except for the vodka. I like it.

    hmm, you may be right veggiegal … try thinking of the lemonized vodka like adding a lot of lemon extract, if that helps.
