		<description>In the Mid West it is now somewhat rare to go to a sushi bar and  find an experienced apprentice trained in Japan sushi chef. Most "chefs" training is usually minimal &#38; the final product reflects it.  I believe that the "average" customer lacks the knowlege of what is mediocre or out right substandard and also may  not have had the oppertunity to have experienced the taste , texture an eye appeal of fine sushi &#38; shashimi. In my opinion this tends to perpetuate the growth in numbers of many sushi restaurants in this part of the country that just know who to serve a piece of fish on a lump of rice or make a roll and call it sushi. Just returned from the newest sushi restaurant in town &#38; couldn't believe that the "chef" even lacked the knowledge to wipe off his knife blade between the cutting of different fish !</description>

		<description>Perfonally I feel more comfortable that my sushi to be made by an experienced Japanese male chef because they definatelly taste better. I feel more comfortable that they know how to deal raw fish correctly. 

I think it is not either gender nor racial issue but the practice and experience that count. Dealing raw fish needs EXPERIENCE. Otherwise it is too dangerous!!! Hope all the sushi chefs in LA have basic understanding at least so their customers will not have food poisoning!</description>

Marisa - you hit the nail on the head, there is an automatic assumption that good sushi chefs are Japanese male. I wonder how many people are disappointed when they see that their chef does not fit that mold.</description>
