Handmade noodles are magic to me. Here is the secret revealed:
There are noodle houses in LA that make their own noodles (right?), but I don’t know if any of them have an open kitchen where you could watch. (via kottke.org)

in Monterey park there was a place called Malan that made noodles fresh per order. They closed I believe there is one Rowland heights still. Cheap and DAMN good.
