The main thing that concerns me about the prepared products at Trader Joes is the massive salt content. Check the sodium count next time *per serving*. Even their frozen shrimp are smothered in salt.

As for poaching eggs, I am in the "no vinegar" camp as I dislike the flavour the vinegar imparts. Because I buy eggs in small quantities (from Trader Joes!), they are generally fresh, so I never have a problem with their colour.

Instead, you can keep your egg whites (aka albumen) tidy by creating a vortex in your hot water (best in a shallow frying pan rather than a saucepan) then using your little bowl to drop the egg into the centre.

The centrifugal force keeps the egg in a tight bundle. I learned this method from watching Martha, but it may be a Julia Child tip.

You can employ this method for two eggs (I just do them at the same time) but it probably wouldn't work with more than that.

Nice tip for my next salad. I'm a big salad fan especially the seaweed salad when we go to any sushi restaurant. Does anyone, by any chances, have the recipe for seaweed salad? I tried to look for it here and there but they don't show you which seaweed to buy, and believe me, there are all kinds of seaweed when I go to a Korean market.
Thanks in advance.

Doug- We are spoiled with TJ's never more than a mile or so away in this town (except Santa Monica, wtf?).

Evan- That's true of a lot of salads. I like the low fat Southwestern Salad, which was leaner dressing. Of course, when I'm dumping two eggs on top, it's not too much of a low cal meal. The fat content in salads is often overlooked, as you say.

I'm usually not a stickler for this, but some TJ's salads are really surprisingly high in fat and calories. FYI. I like the Greek one the best.

the eggs looked perfectly cooked - i must say - im not much of a fan of hardboiled eggs on salad, but a soft boiled or poached has never done wrong be me.

i love Trader's - I wish there were more locations in nyc. I usually trudge all the way downtown to pick up a few staples i can easily carry back - items like nut butters which are hard to find elsewhere at a reasonable price.
